Role Profile

To ensure the AELTC are fully compliant with the legal requirements of the EU Food Information for Consumers Regulation 2014 and the Compass requirements as set out in ‘Core Signatures’ namely a specification for every single product we serve on site, making sure we cover Allergens, Natasha’s Law 2021, and Calorie Labelling Regulation 2022.

 

Main responsibilities

 

Key Responsibilities

  • To input the recipes into SAP & The Source (software to create Allergen Card, Ingredients & Calories labelling).
  • Create a menu plan in The Source with the correct recipes for each different restaurant.
  • Create and print allergen folder from The Source.
  • Create and print ingredients, calories labels.
  • Create monthly APL’s report and send it to the chefs & stores. Maintain recipes and switch delisted ingredients in the system when need it.
  • Create Carbon Footprint labelling with Klimato’s software.

 

Overview

Wingfield: Public Restaurant set menu.

  • To input of the recipes in SAP. Chefs will provide the Specs.
  • Create the menu plan (seasonal menu). Create and print allergen folder (it will need to be printed weekly & monthly or every time we have a change in the menu). Manager will create/print it, but you will support them when need it.
  • To create ingredients & calories labels.

 

Staff Restaurant: Private Restaurant for onsite staff of the AELTC

  • To input of the recipes in SAP. Chefs will provide the Spec.
  • To support to create a menu plan. Chef will create it, but you will support when need it, to amend/create new recipes in the system.
  • To check allergen folder daily, be sure recipes, display menu and printed allergen folder is the correct one for that day. Communicate with the kitchen to be sure recipes are followed as per specifications.

Members Restaurant: Private Restaurant for the Members of the AELTC Club -seasonal menu hot and cold snacks.

  • To input of the recipes in SAP. Chefs to provide the Spec.
  • To support to create a menu plan. Chef/ Manager will create it, but you will support them when need it, to amend/create new recipes into the system.
  • Create ingredients, calories labels when need it.

 

Meeting & Events – Meetings in the AELTC staff areas and Dinners for select groups.

  • To input of the recipes in SAP. Chefs to provide the Spec.
  • To support to create a menu plan. Chef/ Manager will create it, but we will support them when need it, to amend/create new recipes in the system
  • Create ingredients, calories labels when need it.

 

Wimbledon The Championships.

  • To support with the input of all recipes & specification into SAP and create menu plans in The Sources.
  • To print all allergen folders for all areas.
  • To create ingredients, calories labels and carbon footprint.

  • Strong understanding of dietary requirements and allergen legislation.
