Role Purpose
To lead the bar team during race days and event operations, delivering outstanding guest experiences in a fast-paced, high-volume environment. You will ensure service excellence, maintain Levy brand standards, control costs, and uphold all licensing, health & safety, and hygiene regulations. You will act as the duty lead in the absence of the Bar Manager.
Key Responsibilities
Operational Leadership
- Open and close bars in line with Levy SOPs, ensuring full service readiness for race day operations.
- Deliver engaging pre-shift briefings focused on service, sales, and guest experience.
- Maintain high product standards across beverages, glassware, garnishes, and cellar management.
- Manage high-volume service flow during peak race times; allocate stations effectively and lead from the front.
- Handle guest queries and escalations professionally, ensuring positive resolution in line with company policy.
Stock Control & Deliveries
- Receive and check supplier deliveries, ensuring accuracy and quality.
- Maintain stock rotation using FIFO principles.
- Safely handle and store kegs and cellar stock in line with best practice.
- Monitor stock levels and communicate requirements ahead of busy race fixtures.
- Manage returns, ullage, and damaged stock in accordance with procedures.
People & Training
- Supervise bar teams including bartenders, bar backs, and support staff during events.
- Ensure effective rota adherence and break management during long race days.
- Provide on-the-job coaching to maintain service speed, consistency, and hospitality standards.
- Support onboarding and training of new team members.
- Foster a positive, inclusive, and high-energy team environment.
Stock & Cash Control
- Complete shift-based stock checks and accurately record variances.
- Ensure correct use of tills, cash handling procedures, and end-of-day reconciliation.
- Support cost control initiatives to minimise waste and maximise GP.
Compliance & Safety
- Ensure full compliance with Irish licensing laws and age verification policies (Challenge 21/25).
- Adhere to HACCP, allergen management, and COSHH standards.
- Maintain bar cleanliness to EHO standards, completing all required documentation.
- Report incidents, near-misses, and maintenance issues promptly.
Sales & Guest Experience
- Drive revenue through upselling, premium offerings, and product knowledge.
- Support delivery of race day activations, promotions, and sponsor-led events.
- Contribute to creating a vibrant and engaging atmosphere aligned with the race day experience.
- Capture and respond to guest feedback to continuously improve service.
Required Skills & Experience
- 1–2 years’ experience in a supervisory role within a bar, pub, or high-volume events environment.
- Experience working in fast-paced, large-scale events or racecourse environments is highly desirable.
- Strong knowledge of bar operations, including draught systems and cocktails.
- Proven leadership, communication, and team management skills.
- Comfortable using POS systems and basic reporting tools (Excel/Google Sheets).
