The Position
  • To oversee the conference & events culinary operation, assisting the Head & Executive chef to maintain high standards of cooking plus health and safety.
  • Oversees and supervises all kitchen staff.
  • Meeting the company standards, complying with the Kia Oval vision and values
  • To work within the catering operating budget using company nominated suppliers.
  • To manage and achieve basic KPI’s
  • Assist in the smooth running in the kitchen from day to day, communicating effectively with all departments, to deliver an overall smooth service.
  • Directs food preparation and collaborates with Head Chef & Executive Head chef.
  • Assists with menu planning, inventory, and management of supplies.
  • Ensures that food is top quality and that kitchens are maintained in a good condition.
  • Offers suggestions and creative ideas that can improve upon the kitchen’s performance.
  • Schedules staff shifts.
  • Trains new employees.
  • Orders food supplies.
  • Monitors and maintains kitchen equipment.
  • Solves problems that arise and seizes control of issues in the kitchen.
Key Stakeholders
The Oval Events Limited (OEL) is Surrey County Cricket Club’s joint venture with Compass Group PLC. OEL manages and operates all match day catering, hospitality, and bar services as well as non-match day catering, conferences and event management services at The Oval. The secret of the success of OEL is the combined ambition and professionalism of all parties to work as a truly ‘powerful partnership’ to deliver world class experiences at The Oval.
The Oval, currently known for sponsorship reasons as the Kia Oval, is an international cricket ground in Kennington, in the London Borough of Lambeth, South London. The Oval has been the home ground of Surrey County Cricket Club since it was opened in 1845. It was the first ground in England to host international Test cricket in September 1880. The final Test match of the English season is traditionally played there.
In addition to cricket, The Oval has hosted several other historically significant sporting events. In 1870, it staged England's first international football match, versus Scotland. It hosted the first FA Cup final in 1872, as well as those between 1874 and 1892. In 1876, it held both the England v Wales and England v Scotland rugby international matches, and in 1877, rugby's first Varsity match. It also hosted the final of the ICC Champions Trophy in 2017.
Specific Responsibilities:
  • Monitor and maintain consistent food standards and quality across all areas during all stages of production and supply
  • Ensure the HACCP procedure according to the company food safety management is maintained and compiled with
  • To prepare and cook sufficient food keep wastage to a minimum
  • To ensure food is served promptly and work is carried out quickly and efficiently to keep up in busy periods
  • To ensure all food sent out is correctly garnished in line with the picture specification
  • To ensure portion control, preparation and storage methods, labelling and wastage is always carried out correctly
  • To ensure you have knowledge of all food allergens to advise front of house
  • Ensure correct food temperatures are adhered to
  • To check deliveries, ensuring correct items to the desired quality have been delivered, report any quality issues to the head chefs.
  • To work with the head chef in planning menus, the costing of these menus, ensuring the operation is run cost effectively and meeting relevant targets
  • To assist in completion of all relevant paperwork; production and wastage sheets, cleaning records, food hygiene regulations and all other relevant papers

  • To ensure that customers are given a prompt and efficient service and expectations are consistently exceeded.
  • To be customer focused at all times, approachable and quick to exceed expectations in fulfilling customer needs.
People:
  • To be a team player, assisting other team members when necessary.
  • To treat members of the team at location as you would expect to be treated.
Financial Management:
  • To compile all food orders for sections under your supervision, ensuring food standards and cost are agreed with the Head Chef; to ensure stock, deliveries and wastage are all checked and recorded in line with company and food standards.
  • To gain an understanding of food costing, sales mix and menu planning.
Health & Safety, Food Safety, the Environment:
  • To adhere to the company’s Hygiene, Health and Safety policies.
  • To rigorously follow the company cleaning schedules.
  • To ensure that food storage areas are maintained in accordance with the company’s Hygiene, Healthy and Safety policies and procedures.
Additional Responsibilities:
  • To take responsibility for contributing towards your own development with the guidance of the Sous / Head Chef and attend training courses as identified.
  • To show commitment to company values in all aspects of your role.
  • To act as a positive ambassador for the business.
  • To attend to any reasonable request made by the client or Management.
  • To attend training sessions when required.
