 Role Summary 

The Executive Chef takes ownership for the overall success of the evolving, dynamic and innovative Food Program for our Dublin Campus. This role provides functional and high level culinary leadership, expertise, creativity, and project support to the Culinary department, managing, implementing and supporting all food related programs in a multi-unit operation. The Exec Chef sets the standards for BOH operating systems and QA standards, culinary training and mentoring, and culinary innovation & R/D across cafés, catering, and food spots. This role provides functional and culinary leadership to the chef team across the neighborhood and cafe levels, working closely with the operational management structure. 

The great things you will be expected to do:

Day to Day Role Duties 

  • Design, manage and own the overall experience, not just the offerings 
  • Develop and execute strategies to consistently increase feedback scores (via OMNIXM (Omni-Channel Experience Management) across all Dublin culinary touchpoints, focusing on culinary excellence, service delivery, and product quality.
  • Drive Culinary innovation and efficiency, leveraging trends and supporting business excellence with embedding lean or other efficiency initiatives.
  • Provide expert culinary mentorship, coaching, and direction to the chef team, collaborating with their direct managers to implement development plans and performance standards.
  • Act as the Dublin Allergen Champion, ensuring all training, documentation, food preparation protocols, and customer-facing information are fully compliant with all relevant local legislation to minimise risk and ensure client safety.
  • Ensure Health and Safety standards and culture are deeply embedded across all operational units, leading by example to create a proactive, compliant, and secure working environment.
  • Engage with the Client Food Program Manager, keeping them up to date with any on site changes or action plans, and own culinary strategy in quarterly business reviews
  • Work with others to ensure that client and consumer expectations are understood and exceeded 
  • Empower and support the team or colleagues and suppliers to deliver a great service 
  • Inspire teams through training, coaching, development and feedback 
  • Set an expectation of hospitality that is friendly, engaging and best in class

  • Lead testing and implementation of culinary initiatives and sector projects 
  • Ensure initiatives meet deliverables, oversee pilot implementation 
  • Ensure that all products and ingredients that are used are purchased following sector and client purchasing standards and sustainability commitments 
  • Compile and present strategic recommendations directly impacting all culinary operations to senior management 
  • Collaborate with sector nutrition team to maintain recipe and menu electronic database, including scaling to appropriate volumes 
  • Define and own the culinary training curriculum and hiring standards, partnering with HR and Operations to ensure all culinary team members are onboarded and trained to the defined quality standards.
  • Work with Head of Operations to ensure all sector and Compass employee guidelines are implemented and adhered to 
  • Treat everyone with professionalism, care and respect 
  • Communicate with our Partner honestly, accurately and in a timely manner
  • Work closely in conjunction with operations team and senior management

Customer and Client Satisfaction 

  • Embrace and deliver all aspects of the Client Food Program to an exceptional standard
  • Work with others to ensure that client and consumer expectations are understood and exceeded 
  • Promote the Food Program to our Client engaging with them through our food choices, displays, space designs while acting as a Compass Advocate at all times 
  • Be polite, professional and friendly at all times with customers, clients and colleagues

  • Be prepared to assist colleagues in a willing and positive manner including assisting with other duties as required

Health & Safety 

  • Observe and comply with all company and unit procedures relating to safety and security, reporting any issues to your line manager 
  • Take responsibility for your own health and safety and that of others who may be affected by what you do or what you fail to do 
  • Correctly use work equipment, personal protective equipment in accordance with training and instructions provided, reporting any equipment issues to your line manager 

Key skills required 

  • Degree from an accredited Culinary Institute preferred but not required. Bachelor’s degree preferred 
  • Executive-level culinary management experience required 
  • Culinary management experience in a multi-unit setting required 
  • A proven track record as an innovative and financially responsible manager
  • Prior experience managing volume of at least €20M with P&L experience 
  • Multi-unit restaurant or hotel experience a must 
  • Experience in R/D, operations, or concept development a plus 
  • A proven track record of leadership and development
  • Expert knowledge of food and catering trends with a focus on sustainability, innovation, food waste, quality, production, sanitation, food cost controls and presentation 
  • Proven coaching and teaching skills with peers, individuals, and teams 
  • Passion for food trends, flavors, innovation and recipe development 
  • Highly developed culinary creativity skills and comfort with multiple cuisines 
  • Proven industry contacts and relationships that can be leveraged in networking and recruitment of other culinary team members
  • Proven ability to maximize budget, enhance sustainability and creativity across all channels in alignment with business strategy 
  • Ability to effectively communicate, motivate and interact with all levels within the organization 
  • Ability to speak and present effectively in a group setting to Associates, Managers and our Partners and represent the Food Brand 
  • Maintain a positive attitude under pressure and motivate team 
  • Ability to maintain confidentiality 
  • Working knowledge of G-Suite (Google Docs, Sheets, Slides) or MS-Office (Microsoft Word, Excel and PowerPoint).
  • Ability to work in a fast paced, changing environment 
  • Ability to create effective relationships, influence and collaborate internally and externally at all organizational levels 
  • Demonstrates Compass values and recognition principles
