Overview:
To lead the delivery of a diverse and effective, high volume retail food and beverage operation ensuring operational efficiency, overall HSE responsibility, planning and presentation of the food and beverage offer and adherence to agreed first class standards.
In summary ensuring the safe and efficient running of the stadium’s newest attraction and it’s food and beverage offering.
Role Purpose
Reporting to the Head of Retail and through close liaison with our client, you will be responsible for the key areas below (amongst other general responsibilities).
Operations:
Provide first class non-match day and match day retail operations.
Manage the F1 Drive Go Kart track F&B operation – daily service and bespoke events.
Management and development of relevant personnel, providing inspiration and leadership to deliver exceptional service.
Ensure best standards are delivered through regular venue walks and line checks.
Ensure all paperwork is checked and filed, create action logs on all feedback.
Review wastage with the culinary team and cellar team, look at opportunities to control and reduce risk to support overall GP% targets.
Forecast stock requirements and ensure orders are placed in a timely manner.
Ensure that health, safety, hygiene rules and procedures are always followed as a priority.
Demonstrate full alignment with the Levy and client vision and values by consistently doing the right things and celebrating successes.
Finance:
Demonstrate control of all operating costs in line with set targets. Use of Triple Jump to aid purchasing and forecasting requirements.
Manage via labour planners and ensure alignment to budget.
Collate, compile and provide analysis of data as required to support line management.
Ensure all stock takes are completed to deadlines, with any variances investigated.
Profit Protection Supporting with line manager to lead your teams be demonstrating strong knowledge and implementation of profit protection procedures including but not limited to stock control and payment and billing controls.

To lead and manage an effective team of variable personnel.
Responsible for organising staff training days for Managers, Supervisors and front-line team members.
Participate with recruitment, including interviewing. Promoting equality, diversity and inclusion.
Deployment – contribute towards recruitment plans and processes to source and deploy casual workers for differing event requirements.
Culture - Work closely with the management team to develop and sustain a high level of team energy and engagement, focused on great food and hospitality.
Review and Develop – Supporting with line manager to conduct regular performance reviews and talent management with focus on variable managers. Oversee and drive the training plan.
Health and Safety:
Ensures the safe and secure operation of all operational activities on behalf of all stakeholders.
Ensure that all legislative and operational procedures and standards are applied to provide consistent and safe service standards to both Levy employees and customers.
Ensure See, Care, share policy is consistently applied by taking personal responsibility and championing the application across all venues.
Person Spec:
Good people and organisational skills, strong leadership qualities with an ability to engage and lead people.
Highly confident and demonstrates a positive ‘can do’ attitude.
Strong understanding of EPOS and stock control systems.
Ability to analyse and evaluate information to deliver business objectives.
Excellent verbal and written communication skills.
Previous retail experience preferable with at least 3 years’ experience in a similar role.
Passionate about food, drink and customer service.
