Job Introduction

A fantastic opportunity has arisen for a talented and driven Sous Chef to join Rocket Food’s events team in delivering world-class hospitality for our clients.

MAIN PURPOSE OF THE ROLE:

To work as a leading member of the kitchen brigade. Planning, ordering, Mis en place and production of food. Running of events, dinners for 400, stalls and bowls up to 800. To assist the Head Chef with the smooth running of Rocket kitchen.  To support, guide and train chefs both permanent and casual. Take responsibility for the kitchen in the Head Chef’s absence. 

MAIN RESPONSIBILITIES:

  • To report for duty punctually, wearing the correct uniform and protective clothing and adhering to specified grooming standards
  • To help with the daily management of the Rocket events kitchen by assisting the Head Chef 
  • To work within the Rocket HACCPs guidelines, taking responsibility that all chefs and porters work within these boundaries 
  • To minimize waste of any food products always, with accurate ordering & product management of prep & par levels
  • To ensure that the kitchen areas are kept safe, and any dangerous or hazardous areas are dealt with quickly
  • To ensure that operating equipment is kept clean, respected, and is looked after to avoid any avoidable breakages
  • To work cleanly and tidily always, and ensure the team are working using best practices
  • To maintain good working relationships with all other colleagues and motivate the teams around you both in the kitchen and front of house, maintaining Rocket’s ‘team spirit’
  • Ensure the brigade is following and implementing HACCP and cleaning schedules, deep cleaning and meeting current legislation
  • To ensure that recipes and standards are always maintained, and that dishes are replicated with consistency
  • Monitor and check the work carried out by all chefs, teaching, developing and inspiring junior chefs & team members
  • To produce the volume of orders on a day-to-day basis in a set time in the most efficient way
  • Order all ingredients working within the budget and striving always to source the best product
  • Assist with producing and serving tastings at the unit
  • A clear understanding of allergens

 

KEY RESPONSIBILITIES:

  • Ordering and MEP lists for dinners and bowl food events 
  • All ingredients ordered in line with trade & budgeted revenue for events, ensuring profitability
  • Management of stock including advanced prep and freezer management to ensure levels are correct and in date
  • Ensuring prep is completed to the specified specs and in the allotted times
  • Management of a team of chefs to produce food to meet the company’s specifications
  • Packing and sending of jobs ensuring everything is correct
  • Running of events with a team of chefs, ensuring quality, timings and specifications are met 
  • Responsibility for ensuring that all chefs adhere to the policies and guidelines in each venue, with correct equipment and cooking procedures met.  Each event is correctly set up and broken down respecting the venue
  • Ordering MEP and production of lunches
  • Support senior kitchen team with upkeep of food alert & safeguard, training, data recording and actioning
  • Overseeing maintenance log, reporting problems to Head Chef for approval of repairs and actioning, prioritising work
  • Input of ideas and development of seasonal menus with the Head Chef
