The role will have responsibility for helping shape the strategy for our Sustainability Goals within the Catering Operation at Tottenham Hotspur Stadium.
By understanding the direction of both Levy as a growing catering partner, and a market-leader in sustainable catering practices, and aligning with the Tottenham Hotspur targets including focuses of Operational Carbon Reduction Initiatives, Food Waste Measurement and Product Sourcing.

A passion for detailed planning and review, confidence to challenge a complex catering operation, knowledgeable with both food and beverage – and aligning the current operation to our goals.
Sustainability Manager - Catering Operations - The Role
Planning
Collaboration – Frequent liaison with multiple stakeholders. From our client team here at the stadium, to our Levy sustainability teams, and of course the Culinary & operations teams to ensure that sustainable decisions are at the forefront of each discussion.
Product – Working collaboratively with the culinary teams, to advise where a product can be developed or altered to align with our Carbon Reduction targets.
Structured Approach – Being conscious of the continual off set between sustainable and commercial decision making.
Operations
Carbon Measurement/Reduction – Track our current carbon emissions, using activity-based data to fully understand the impact of our menus. Then identify areas of focus that would support the Carbon Reduction targets. Utilise a number of tools to support this, from our sustainability dashboards powered by our Analytics Team at E15 Insights, FoodSteps for carbon labelling. By using intensity factors we can make better-informed choices at the point of our menu design, which can often be months in advance of a major event.
Food Waste Management - Regular monitoring and development of strategies to enable our teams to better manage food waste. This is a challenging
Communications - Directly liaise with client and the wider catering team to ensure that expectations are clear. Use structured, regular and consistent meetings as a key tool.
People
Culture - Work closely with the management team to develop and sustain a high level of focus and engagement around our sustainability goals
Review and Develop - Conduct regular reviews, being able to present to the client and up-to-date position within the year of the current measures taken, and impact of Carbon Reduction.
Financial & Business Development
Financials – awareness of the importance in balancing commercial & sustainable objectives within a complex large operation
Product development - Liaising with culinary and beverage teams to implement continuous product development and drive increased sustainable benefits across the venue.
