About National Theatre Food & Drink

NT Food & Drink is a unique partnership between the NT, Levy UK&I and KERB.  Together we are creating a world class food and drink destination embedded within the heart of the NT’s operations, ensuring all public facing venues as well as internal hospitality and commercial events support the NT’s overall vision, values and culture. The NT actively sought to not outsource the catering operation but chose instead to stay actively involved through constructing this new partnership.  This ensures F&D and theatre specialism combine to offer the best experience for our customers. Although this role sits within Levy UK & I, a symbiotic relationship is cultivated across the entire partnership.

 

Role Purpose

The Operations Director will oversee and manage the day-to-day challenges across all food and drink offerings within the iconic National Theatre, working closely with the key stakeholders and influencers in the business to succeed in a comprehensive set of key deliverables. The main objective to this role is to fully release the potential in a grand and inspiring vision, whilst ensuring a smooth operation which hits its financial targets and runs both efficiently and compliantly. The role requires a proven business leader who can build a great team, put efficient and effective service flows into place and make commercially astute decisions, balanced while ensuring all aspects of the customer experience. From coffee and cake to a Michelin star-level 3-course meal, and an interval drink to private corporate events, the Operations Director will oversee all day-to-day experiences, and be the key driver in the success of the project.

All elements NT Food and Drink share ambitious goals in regard to the sustainable future of our industry, and so a passion and willingness to lead that focus and steer the day to day, is a fundamental requirement in leadership.

 

The total operation generated an annual turnover of circa £10 million pre Covid, when it had been delivered by an in-house F&D team since the Theatre opened in 1976. This role will be required to support the F&D partnership and key stakeholders in delivering what is now a complex £15m/year-plus business whilst ensuring that behind the numbers, there are exceptional customer experiences in line with those audiences receive in the theatres themselves. World-class food and drink delivered with real warmth and hospitality. 

 

The aim is to substantially grow this revenue and resulting net profit over the next 5 years. The NT attracts an annual audience of over 700,000 to see its shows, and benefits from a passing footfall along the South Bank of circa 15m visitors per annum. The workforce on site is circa 1500 p/day including permanent, fixed term, casual and contractor staff.

The Role

Reporting to the Managing Director of NT Food & Drink and through close liaison with our venue partners,

you will be directly responsible for the key result areas below (amongst other general responsibilities).

 

Operations:

 

Line management - Drive the HOD’s to effectively deliver KPIs daily. Monitoring, reviewing and development of teams to ensure standards are met and are consistent across the group.

Delivering objectives - Directed by the Managing Director, on behalf of the NT Food and Drink Board you will execute its strategic aims daily, leading firmly to deliver the key goals outlined. Reporting monthly to the NT Food and Drink Operations Board of said progress.

Commerciality - Ensuring competent levels of real-world financial opportunity and understanding, through Managers and their teams, to realise autonomous working practices that drive performance upwards.

Protect- Employees, guests, and visitors from harm by ensuring risk concerns are robustly managed.
